Warm Up with this Easy Crockpot Chicken Tortilla Soup


These chilly fall days just beg for comfort food.  If you’re looking for a meal that basically cooks itself, then you’ll want to make this recipe for Chicken Tortilla Soup.  It’s creamy with just a little kick and it’s so simple!  This is what you’ll need:

  • 1 lb.  boneless chicken breasts
  • 2 cans of Rotel {I used mild}
  • 1 can black beans {drained & rinsed}
  • 1 can sweet corn
  • 2 cans Swanson Chicken Broth
  • 1 can Campbell’s Cream of Chicken Soup
  • 1 can Campbell’s Cheddar Cheese Soup

Add all the ingredients to your crockpot, cover, and cook on high for 6 hours.  After six hours, use a whisk to break up the chicken.  Spoon into bowls and top it with cheddar cheese and a dollop of sour cream.  You’ll have happy tastebuds all weekend long!
